Before Operations
Empty bin, insert new bin bag
Complete kitchen cleaning procedure
Disinfect surfaces with sanitiser (50:1) for seconds, wipe with blue roll
Tie hair back/use hair net
Wear clean clothes & apron
Remove jewellery
Wash hands thoroughly with warm water & handsoap, dry with blue roll
Cover cuts with coloured plaster
Check the temperature probe is working correctly by dipping into boiling water
After Operations
Put baked products in boxes and move to the packing room.
Refridgerate high risk foods in holding fridge
Ensure opened packets are sealed or in containers
Place dairy/meat products into the fridge
Wash aprons at 90 degrees
Place dishes into the dishwasher
Hand wash used baking trays with hot soapy water
Store clean utensils away
Empty bin, spray with sanitiser (50:1) and leave for 30 seconds before wiping away
